Our History

The establishment of a third generation Grappa distillery was the fulfilment of a lifelong dream for Giorgio Dalla Cia. His Father, Vittorio, who was initially a wine merchant, had bought an old still in the early 1920’s and quickly developed the family business into one of the biggest producers of Grappa in Italy. The production of Grappa - this unique Italian husk spirit - was such an inherent part of Giorgio’s childhood that he
was determined to continue the legacy on local soil.

This only became possible after 1994 when the production of Grappa in South Africa was legalized. Two years later Giorgio with his son George, imported a state-of-the art copper alembic still from Italy, establishing their boutique Grappa distillery in Stellenbosch.

Our Grappa

Grappa is a husk spirit which derives it’s name from Graspa, an Italian term used to describe the fermented grape skins (husks or pomace) left over after the wine making process.
Through a artisinal bain-marie double-distillation, within 48 hours after the grapes have been pressed, only 30 litres of Grappa are delicately extracted from a half ton of husks with very concentrated aromas that define the spirit’s distinct flavour and capture the essence of the cultivar.
No traditional Italian meal is complete without a Grappa. Sipped slowly, slightly chilled or at room temperature, or added into an espresso as a caffe’ corretto, Grappa is the ultimate digestive!
Giorgio Distillery

Pinot Noir/Chardonnay Grappa 43% Alc. 500ml


We distill the husks of the Pinot Noir and Chardonnay separately, then mature it at full strength for 6 months to a year in stainless steel tanks until ready for dilution, blending and bottling.

“A fragrant bouquet of crisp celery and pecan nuts, the aftertaste is clean and smooth.”


Cabernet Sauvignon/Merlot Grappa 43% Alc. 500ml


We distill the husks of Cabernet Sauvignon and Merlot separately, then mature it at full strength for 6 months to a year in stainless steel tanks until ready for dilution, blending and bottling.

“An aromatic bouquet of creamy dark chocolate and sweet raisins. The aftertaste is nutty and long lingering.”


Cabernet Sauvignon/Merlot Premium Selection Grappa 40% Alc. 500ml


This Grappa is made in the same artisanal method as the Cabernet/Merlot but aged in Oak barrels.

“A smokey dark chocolate and vanilla bouquet with a slightly sweet aftertaste thanks to 6-9
months of wood maturation at full strenghth in second-fill French oak barrels used for our Chardonnay.”


Single Cultivar 2015 Pinot Noir Grappa 43% Alc. 500ml


This limited edition Grappa was obtained by distilling the fermented husks of our maiden vintage of Pinot Noir 2011. Through a double-distillation, within 48 hours after the grape skins were lightly pressed. Only 30 litres of Grappa were obtained per distillation of half a ton of fermented husks.

 “Hints of honey, dry fig and a wild strawberry bouquet with a gentle, lingering aftertaste.
Only 368 bottles were produced.”

10 Year Anniversary Edition Grappa


Distilled in 2004 from the fermented skins of Cabernet Sauvignon and Merlot a 10 distillation process was used:
1st Distillation: Potstill (Bain-Marie)
2nd Distillation: Column Distillation (Fractional)
The final blend composition: 2/3 cabernet sauvignon grappa, 1/3 merlot grappa
Matured in a new, heavy toasted French oak barrel for 10 years at 75%alc.

“Deep amber in colour, the bouquet has delicate hints of plum, marzipan, orange zest, dark chocolate, cherry and ginger spice.”
“The taste is velvety and smooth with a layered mid palate and lingering aftertaste.”  

Total Production:
1000 bottles x 500ml at 43% alc.
Bottled and labeled entirely by hand, each bottle is numbered and signed
